Almond Ice Cream with Caramel Sauce

What’s summer without ice cream?! To be honest, I’ve been waiting for the ice cream shop down the street to create almond ice cream but I just couldn’t wait anymore so I made it myself and needless to say, it exceeded all my expectations. This almond ice cream is so smooth and creamy and has the perfect amount of crunch in the middle. It’s sweet but not too sweet and surely a great alternative to „normal“ ice cream that you can give your children without any second thoughts. From now on until the rest oft he summer you will find this ice cream in my freezer. The cherry on top ist he incredible caramel sauce made out of dates.
INGREDIENTS
Method:
For the ice cream, place 30 g almonds and the rest of the ingredients for the ice cream into a blender and mix until smooth. Pour the mixture into a lined casserole dish. Chop the rest of the almonds, pour them on top of the mixture and stir them in. Place the casserole dish into the freezer for at least 4 hours or ideally over night.
For the caramel sauce, place all the needed ingredients into a blender and mix until smooth. Place in the fridge until you eat the ice cream.
What is Vanilla, grounded?
It’s basically vanilla powder. It’s what you scratch out of a vanilla bean but instead of buying a vanilla bean you can already buy the inside part which is grounded vanilla:)
