The perfect dinner
Once a week I go to the local market and buy fresh fish to prepare an easy and nutritious dinner. I love the market and I love this green veggie salmon! As always, on a weekday night I want a healthy dinner that’s quick and easy to clean up. Lately I have been making this recipe so often because it’s so easy and I love the combination of fennel and zucchini. You can also use any other veggie as a basis. Another delicious combination is a bed out of bell peppers in all colors!
Preheat the oven to 180°C. Wash the veggies and cut into slices. Place them into a casserole dish and add salt, pepper, herbs and 1-2 tbsp olive oil. Mix with a spoon. wash the salmon filets and place on top. Brush with olive oil and dress with salt pepper and herbs. Cut the lemon in slices and place on top of the salmon and add some fresh dill. Bake for 20 Minutes until the salmon is done. Serve with rice of quinoa.
