Tip: if you have a histamine intolerance you can enjoy the same recipe just without the sauce. Sprinkle some apple cider vinegar and olive oil on the salad instead.

INGREDIENTS

6 large romaine salad leafs
50 g soba noodles
1 small cucumber
1 handful fresh coriander
2 tbsp crushed peanuts
1-2 carrots
For the sauce:
1 tbsp peanut butter
1 tbsp lemon juice
Pinch of salt
1 tsp maple syrup
4 tbsp warm water

Method:

Cook the noodles as written on the package. Grate the cucumber and carrot, chop the coriander and place into a bowl. Add the crushed peanuts and cooked noodles. For the sauce mix all the needed ingredients and pour over the salad. Mix well.

Place the salad leafs on a board and fill them with the noodle salad. Roll up and enjoy!
