Pumpkin Bread

INGREDIENTS

180g grated pumpkin
200g buckwheat flour
1 tbsp dried herbs
1 tsp salt
2 tsp baking powder
2 tbsp pumpkin seeds
2 tbsp grounded flaxseeds
130ml water
2 tbsp apple cider vinegar
40ml olive oil

Method:

Preheat the oven to 180°C and line a small bread tin with baking paper. Place the flaxseeds into a glass and add the water. Soak for 10min. In the meantime place all the other ingredients (except 1tbsp of pumpkin seeds) into a bowl. Add the soaked flaxseeds with water and mix well. Place the dough into the tin and distribute evenly. Sprinkle 1tbsp of pumpkin seeds on top. Bake for 45-50min and let it cool off completely.
