Bright and Shine!

Nothing better than to start the day with homemade puffed amaranth granola. Puffed amaranth is kind of a special ingredients which gives this granola some extra crunch. If you can’t find puffed amaranth, puffed quinoa or puffed rice also works.

I usually prepare my granola already on the weekend. This way I always have it handy in the morning. I love to combine it with almond milk or coconut yogurt and fresh fruits or as a topping to my smoothie bowls.

The recipe is so quick and easy, making it ahead really removes the stress of breakfast in the morning when things are busy.

Serves 500 g
Cooks in 20 Minutes
Difficulty Easy

INGREDIENTS

20 g puffed amaranth
250 g oats
90g sunflower seeds
70 g pumpkin seeds
2 tbsp dried cranberries
1 tsp cinnamon
Pinch of vanilla
Pinch of salt
80 g maple syrup
3 tbsp coconut oil, melted

Method:

Preheat the oven to 180°C and line a baking tray with baking paper. Place all the dry ingredients into a large bowl and mix. Add the wet ingredients and mix again. Distribute the granola on the lined baking tray and bake for about 15 min or until golden. Take the granola out of the oven and let it cool off completely. Store in an airtight glass or container.
