Tip: If you have a histamine intolerance, you can easily exchange some ingredients and make the cookies as well. You can use almond butter instead of peanut butter and leave out the chocolate all together or use white vegan chocolate instead:)
Preheat the oven to 180°C and line a baking tray with baking paper. Pit the dates and place them into a bowl. Add hot water and let them soak for 5 minutes. In the meantime, place all the ingredients into a large bowl and mix. Drain the dates and squeeze out any leftover water. Add to the rest of the ingredients and knead with your hands until you have a dough. Form 8-10 cookies and place them on the lined baking tray. Bake for 10 minutes and let them cool off.
