Baked Sweet Potato with Coconut
back to mainI’m so obsessed about the combination of sweet potato and coconut yogurt. As you already now I’m anyways crazy about coconut and eating it with sweet potato is divine! The most delicious way to eat this is by placing the potato in the oven for 45 minutes in 180 ˚ but if you are in a rush you can just pop the sweet potato in the oven, 4 minutes on each side. Cut it open in the middle and pour the coconut yoghurt on top. I love to eat this with a simple kale salad or some zucchini pasta, which you can prepare while the sweet potato is baking! This meal is so healthy and simple and really keeps me full until dinner without any sugar cravings in between.

Method:
Preheat the oven to 180 ˚. Slice some cuts into the sweet potato and place it on a baking sheet. Pop it into the oven for 45 min. Cut the sweet potato and open it up in the middle. Pour the coconut yogurt inside and sprinkle some hemp seeds on top.
