Cozy Afternoons…

I love smoothies but I have to admit that I prefer warm cozy and creamy drinks when its cold outside. That’s why I made this super yum warm pumpkin smoothie for colder days.

This creamy warm smoothie is full of goodness, delicious and satisfying. It will surely keep you warm and happy:). I’m always so fascinated how many amazing recipes you can make with pumpkin. From breakfast over Pizza, pasta and pie, this veggie never gets old!

Difficulty Easy

INGREDIENTS

1/2 small Hokkaido pumpkin
250 ml coconut milk
1 tsp maple syrup
1/2 tsp cinnamon
Pinch of vanilla

Method:

Cut the pumpkin into small pieces and place into a pot. Add all the other ingredients and cook on low temperature until the pumpkin is soft. Place into a blender and mix until smooth. Add more coconut milk if needed. You can serve it as is or add coconut cream on top:)
