The best Kale Salad!

I know that Kale is not for everybody but I absolutely love it. Also, it´s basically one of the best superfoods and super accessible at the same time. I also really enjoy superfoods such as Goji Berries, Hemp seeds and others but the truth is that they are much more expensive and there are lots of superfoods right in front of our eyes such as kale, flaxseeds…that are just as powerful and so much more accessible. To cut a long story short, kale is super healthy and when combined with the right foods, it super delicious!

I love this salad combination so much for two reasons: one, its very tasty and two its so easy to make. All the ingredients of the recipe harmonise perfectly together. The fresh apple with crunchy almonds, bitter kale, creamy pumpkin and sweet cranberries is so so delicious I could eat the salad every single day!

This is the perfect recipe for an everyday meal and ideal to take with you on a flight or to work.

Difficulty Easy


200 g quinoa, cooked
250 g pumpkin, roughly chopped
1 apple, roughly chopped
50 g almonds, roughly chopped
70 g kale, chopped
handful cranberries, dried and without any sulfides
to taste salt
1 tbsp olive oil
to taste lemon


Firstly, wash the quinoa in a strainer. Then cook it in 400 ml hot water until all the liquid is absorbed and set aside. Now, cook or bake the pumpkin. I love to bake it for about 20 minutes in the oven but you can just as well cook it in a pot or roast it. While the pumpkin and the quinoa are cooling off, prepare the rest of the salad. Chop the kale, almonds and apple and place into a large bowl. Add the cranberries, pumpkin and quinoa, the dressing and mix well.
