Good Food is Good Mood

I love a hearty and warm dinner, especially on cold days. The most important for me is always that its easy, fast, healthy and delicious. This salmon with pistachio crust fulfills all of the criteria which is why I love to make it. The soft salmon with the crunchy crust is really incredible and makes a simple salmon dish super flavoursome and interesting. Fitting the colder weather I’m using seasonal veggies. You can adjust them to any season though and use any kind of veggie.

This salmon with pistachio crust is also a great recipe to make when you have friends over for dinner. Plus, you have much less to clean since you only need one baking tray:).

INGREDIENTS

2 salmon fillet
1 handful mixed fresh herbs (parsley, coriander)
120 g pistachios, unsalted
2 tbsp olive oil
3 carrots
2 handful kale
1 Zucchini
salt to taste
chili optional

Method:

Preheat the oven to 180°C and line a baking tray with baking paper. Cut the carrots and zucchini lengthwise, place on the lines baking tray and drizzle some olive oil on top as well as a bit of salt. Bake for about 20 minutes.

In the meantime, prepare the pistachio crust. Place the pistachios, fresh herbs, 2 tbsp of olive oil and some salt into a food processor and blend until you have a crumbly texture.

Take the veggies out of the oven, add the kale and the salmon on top. Press the crumbs on top of the salmon and bake for another 15 minutes.
