Quinoa Muffins

Quinoa is my favourite kind of grain. Combining quinoa with a sweet recipe like this one can only turn out amazing! I am always trying to make breakfast and snack recipes that I can prepare in advance, give energy and are healthy. I love these quinoa muffins! They are the perfect reason to get up in the morning and the ideal breakfast for people on the run.



Serves 10 muffins

170 gr quinoa rinsed & cooked
255 gr oat flour (oats crushed in a personal blender)
96 gr coconut sugar
1 1/2 tsp baking powder
1 tsp salt
75 gr raisins/ chopped dried apricots (sulfide free)
180 ml coconut milk
60 gr apple sauce
1 tsp vanilla extract


Pre-heat the oven to 180 °C. Mix all the ingredients well and place the mixture into a silicon muffin tray. Bake for 25 min

    Some people asked me to post this recipe in cups and tbs so here it is 🙂

    1 cup quinoa
    2 cups oat flour
    3/4 cup coconut sugar
    1 1/2 tsp baking powder
    1 tsp salt
    1/2 cup raisins
    3/4 cup coconut milk
    1 egg
    1 tsp vanilla

      Hi Dave,
      The reason why dates and raising sometimes cause a reaction is because of additives and sulfides. Therefore I always use only organic dried fruit without any additives or sulfides. In general, some people have a digestion problem when consuming too many dried fruits so I wouldn’t eat too much at once. In my experience when I bake or cook with them and make sure to buy some without additives or sulfides I’m super fine. I always ate them even in my very sensitives times. Hope this helps! Maybe it’s worth testing it and find out for yourself. If you do have problems with it, I’m happy to suggest alternatives for the recipes:)
