Are you crazy about pumpkin?

I honestly have to say, the only thing that gets me through the cold months is that pumpkin is in season again. This veggie is one of my absolute favourites because its super tasty and you can do so many amazing recipes with it.

Some of my favourite pumpkin recipes are:

And now these pumpkin dumplings!

The combination of pumpkin and polenta is just so creamy amazing! The cherry on top of the ice are the crunchy pumpkin seeds which add texture to the dish. I love to serve the pumpkin dumplings with a simple green salad but it’s also a great side to any chicken or fish meal.

Serves 10 dumplings
Cooks in 45 Minutes
Difficulty Easy

100 g curd (lactosefree)
170 g polenta
200 g pumpkin mash, freshly steamed or store bought but whithout additives
1 tbsp olive oil/pumpkin seed oil
1 tsp salt
60 g pumpkin seeds, chopped

Place all the ingredients except of the pumpkin seeds into a large mixing bowl and combine well. let it sit for about 30 minutes. Heat up water in a large pot until it starts to bubble. Use your hands to form the dough into round dumplings and carefully place it in the water until they float to the surface. Drain the dumplings and roll in the chopped pumpkin seeds. Serve with olive oil/pumpkin seed oil. It's lovely with a salad or as a side for chicken or fish.
