Looking for some oriental flavours? – Try this wonderful Oriental Bulgur Salad

I’m a big fan of oriental flavours! I think they add so many interesting flavours to a dish and make it so much more interesting! The combination of this salad is really wonderful and such an amazing way to make a special salad. Reading the ingredients list you would never think that this is such an easy and quick salad to prepare but it actually is! The whole mixture of all of the ingredients, sweet and savoury with lemon and cinnamon is amazing! This is the best salad I’ve ever made! Try it and let me know what you think 🙂

Difficulty Easy

INGREDIENTS

65 gr Bulgur/Quinoa
Salt
150 ml hot water
2 celery sticks
1 handful fresh mint
1 handful parsley/coriander
80 gr pomegranate seeds
60 gr Macadamia nuts (optional)
50 gr dried apricot, chopped (sulphide free)
Juice from half a lemon (optional)
Olive oil
½ tsp cinnamon

Method:

Pour the hot water into a bowl, add the bulgur and salt cover it and soak for 15 min until the bulgur is soft. In the meantime, cut he celery in fine slices and chop the herbs. Combine all the ingredients with the bulgur. In a separate bowl, mix the olive oil with the lemon and cinnamon and pour it into the salad. Mix well and let it soak for 15 min before digging in.

    That looks so yummy. I will definitely make it. But from looking at it I would have said that its quinoa rather than
    bulgur. The white and the brown grains, the ring around the grains… The bulgur they sell here doesn’t look like that.

      Thank you for your comment! So happy you will make it! It is Bulgur but if you want you can actually use quinoa as well.
