Maple Roasted Winter Veggies with Tahini Sauce

Baby it’s cold outside…

When it’s cold outside I crave for warming nourishing meals. That’s why I can’t get enough of these Maple Roasted Winter Veggies with Tahini Sauce. The mix of veggies is so delicious and exactly what I need to stock up on all my vitamins. I love the sweet and herby taste from the maple syrup and fresh thyme. The pomegranate add the right amount of freshness to it and the creamy tahini sauce completes the dish.

This recipe is perfect for a quick mid week dinner as well as a great side when you make a big festive dinner with friends and family!

Serves 4

250 g carrots
100 g parsley root
200 g celeriac
500 g sweet potato
400 g brussels sprouts
2 tbsp fresh thyme, chopped
2 tbsp olive oil
1 tbsp maple syrup
1 tsp apple cider
To taste: salt, pepper
To serve: pommegranate seeds
Tahini Sauce:
35 g Tahini
45 ml cold water
Pinch of salt
1/2 tsp olive oil
1 tsp lemon juice (optional)
1/2 - 1 tsp maple syrup


Preheat the oven to 180°C. Peal and chop all the veggies and place them into a large mixing bowl (except for the brussels sprouts). Add apple cider, olive oil, maple syrup and chopped Thymian. Sprinkle salt and pepper and mix everything well. Roast for about 15 minutes, then add the sprouts and mix again and place it back in the oven for about 20 minutes.

In the meantime, prepare the tahini sauce. Place all the ingredients into a blender and mix until smooth. Serve the veggies with fresh pomegranate seeds and tahini sauce.
