Legendary Oat Pancakes

I’m going to have pancakes with a side of pancakes 😉

I’m a huge foodie but I have to admit that breakfast is my favourite meal of the day. I always need to start my day with something sweet, no matter the time. Sometimes my mornings are so busy, I only get to have breakfast at lunch time and I still want to have a breakfast instead of lunch. I especially love to start the day with oats because they are super healthy, keep you satisfied for a long time, give you energy and you can make so many amazing recipes with it. You can make my legendary oat pancakes but also my breakfast pizza or overnight oats.

Especially on weekends I love to make a huge batch of pancakes and top them of with all kinds of yummy fruits. These oat pancakes are seriously legendary. They always turn out amazing and have the perfect consistency! Be sure to try them and let me know with what kind of toppings you like to decorate your pancake tower:).

Cooks in 10 Minutes
Difficulty Easy


100 g oat flour (glutenfree if needed)
150 g coconut milk (or any other plant milk)
Pinch of vanilla, grounded
1 tbsp maple syrup/honey/agave/date syrup
1 tbsp coconut oil
1-2 tbsp fresh blueberries/chopped chocolate (optional)
100 g coconut yogurt
maple syrup
shredded coconut
almond butter


Combine all the ingredients for the pancakes in a large mixing bowl until you have a smooth batter. Use a non sticking pan and turn the stove on medium heat. Spoon the batter, tablespoon by tablespoon into the hot pan and fry until golden brown on each side. Build a pancake tower and spread coconut yogurt in between the layers. Top off the pancakes with fresh fruit and sweetener or nut butter of your choice.
