“Nothing looks as good as healthy feels”

I hope you all had wonderful holidays and enjoyed a restful time. I don’t know about you but I surely have been eating more than usual in the past weeks. It’s all been healthy but it has been a lot of my baked treats as well as big dinners. I don’t think there is anything wrong with that, quite the opposite actually. You should enjoy without any guilt! After all those sweets I have been cravings greens again and to start the year balanced and healthy I made this super delicious green power bowl!

Dark green veggies are especially nutritious because they belong to the healthiest foods on our planet. They can work against diseases and we usually are not eating enough of them. This green power bowl will surely make it easier to get your greens in. It’s a great combination of a variety of greens with all kinds of flavors and textures. I really love the simplicity of the recipe topped off with some creamy tahini.

Serves 2
Cooks in 20 Minutes
Difficulty Easy

INGREDIENTS

1/4 broccoli
1 cucumber
1 fennel
1 handful salad leafs
4 tbsp peas
1 zucchini
1 pok choi
1 avocado (optional)
1 tbsp hemp seeds, shelled
to taste salt
2 tbsp sesame oil/olive oil
1/2 lemon juice (optional)
2 tbsp tahini/almond butter

Method:

Boil hot water with salt and cook the broccoli, peas and pok choi in it until done. In the meantime, wash the salad and place it in the bottom of the bowls. Spiralise the zucchini and cucumber and place on top. Cut the fennel and add on top. Add the cooked veggies. Sprinkle sesame oil/olive oil and lemon on top and add salt to taste. Cut the avocado in half and sprinkle shelled hemp seeds on top. Finally sprinkle some tahini on the green bowl and enjoy!
