Time for some gooey gingerbread cookies <3
One thing I’ve been really missing since my diagnosis is gingerbread. I love the consistency, the sweetness and all the childhood memories I have with eating gingerbread. While Christmas is not here yet, it does feel right around the corner and let’s be honest, it’s never too early or too late for gingerbread.
When you have a look at the ingredients you might think that this has absolutely nothing to do with gingerbread but for some reason these cookies remind me so much of gingerbread. If you try this recipe (and I really recommend that you do because they are amazing!) please let me know if you think I’m crazy or if you can taste and feel it, too. The gooey texture, the sweet chocolate and crunchy outside really resembles chocolate gingerbread, how I know it so I couldn’t be happier to have found a healthier alternative thats tastes heavenly good.
Another awesome fun fact about this gingerbread cookie recipe is that you only need 5 ingredients to make it. Is this for real!?! No excuses anymore to make your own healthy cookies, which you can indulge on without any regret.

Preheat the oven to 180°C and line a baking tray with baking paper. Place all the ingredients (except of the chocolate) into a food processor and blend until you have a dough. Add the chopped chocolate and mix again very shortly. Scoop the mixture out, tbsp by tbsp, roll the dough into small balls and place on the lined baking tray. Wet a fork and squish them down into cookies. Bake for 15 min, until golden. Let them cool off and enjoy!
