This cucumber and mint dip is incredible! It’s super quick and easy to prepare and tastes so fresh and crunchy. The mint adds so much extra flavour and is perfect to serve as a dip with fresh veggie sticks.
I love to offer this at barbecues where you can eat it with grilled vegetables or I make this as a snack for myself with raw vegetable sticks.
Peel the cucumber and cut it lengthwise in half in order to carve out the seeds. Cut the cucumber into very small pieces and mix it with the mint, salt, paprika powder and yogurt and start dipping. If you want, stir in 1 tsp of flaxseed oil fr extra creaminess. Store in the fridge for up to 3 days.
