All I want for Christmas is you!

I’m soooo excited to share with you the last part of my exclusive Christmas Menu! It’s finally time for the dessert, my favourite food:). I prepared two incredible desserts for my menu, which I’m sure you are going to love so ideally just make both for the holidays!

This apple raisin Christmas cake is so incredible! The texture of the cake is super moist and fluffy thanks to the raisins and apples. The cake is also quite light so it’s really perfect for dessert after a big holiday meal!

Serves 1 cake
Cooks in 50 Minutes
Difficulty Easy

INGREDIENTS

3 apples
100 g raisins
65 g coconut sugar
3 tsp baking powder
2 tsp cinnamon
1 tsp vanilla
200 g buckwheat flour
Pinch of salt
80 g almond flour
230 g plant milk
2 tbsp coconut oil

Method:

Preheat the oven to 180°C and line a round cake tin with baking paper. Place all the dry ingredients into a big bowl and mix. Shred 2 apples and add to the mixture. Add the liquid ingredients and mx well. Pout the batter into the lined cake tin. Cut another apple into slices and arrange in a circle on top. Bake for 45-50 minutes.
