Tip: this recipe is not suitable for people with histamine intolerance!
Place flour, water and salt into a bowl and whisk until you have no lumps left. Let it sit for 5 minutes to thicken. Heat up a small pan with the coconut oil and add 1 ladle of batter. Flip after 1-2 minutes until both sides are golden. Repeat the process until all the batter is used.
Fill the Crepes with whatever your heart desires. I love to spread some tahini on them and fill them with lots of crunchy veggies. You can also fill them with roasted veggies, avocado or pesto.
