Sweet Potato and Potato Latkesback to main
Peel the potatoes and sweet potatoes. Grate the potatoes and sweet potatoes by hand or with a food processor and place everything into a kitchen towel. Rinse alle the liquid out and pour the grated pieces into a mixing bowl. Chop the onion and add to the potatoes. Add the starch and mix. Pour some oil into a pan and heat it up. Form round latkes with your hands and fry them in the pan until both sides are golden and crunchy. You can also bake them in the oven at 180°C but they do get less crunchy so I prefer to fry them.
Pour the curd into a bowl. Chop the herbs and add them to the curd. Add the paprika and salt and mix. Serve the latkes with curd and add salt and pepper to taste.
