INGREDIENTS

150g quinoa, cooked
1 small cucumber, diced
1 handful chopped fresh mint and parlsey
2 slices of watermelon, cut into chunks
1 handful black olives (optional and careful no histaminefree)
To taste salt & pepper
1/2 lemon, juiced (optional and careful no histaminefree)
2-3 tbsp olive oil

Method:

Place all the ingredients into a salad bowl, add lemon juice, olive oil, salt and pepper. Mix and serve! So easy so good!
