Raw Pad Thai

INGREDIENTS

1 carrot, spiralised
1 zucchini, spiralised
1 cucumber, spiralised
1-2 green onion, chopped
1/2 handful coriander, chopped
Pinch of fresh chili, chopped
1 tbsp peanuts, chopped
1 handful kelp noodles
For the sauce:
1 tbsp peanut butter
1 tbsp lime or lemon juice
Pinch of salt
4 tbsp warm water
1 tsp maple syrup

Method:

Place all the spiralised and chopped veggies into a large bowl. Cook water in a pot until hot and take it off the stove. Place the kelp noodles inside for 2 minutes until ready and add to the pad thai.

Place all the ingredients for the sauce into a glass and mix well. Pour over the salad and mix.
