Purple Sweet Potato Soup

INGREDIENTS

2 big purple sweet potatoes, diced (ca.400g)
2 carrot, diced
1/2 white onion, diced
1l vegetable broth
1 tbsp tahini
1 tsp Za'atar spice
To taste: salt & pepper
To serve: Sesame seeds, toasted & coconut yogurt (optional)

Method:

Place all the veggies into a pot and roast for 1-2 minutes on low temperature (no oil needed). Add the vegetable broth and Za'atar and cook for about 15 minutes until the veggies are soft. Turn off the stove, add tahini and puree with a hand mixer until smooth and creamy. Serve with toasted sesame seeds and coconut yogurt.
