I love sleep because it’s like a time machine to breakfast!

Breakfast has never been creamier. This porridge with caramelised apples is so delicious it’s almost unbelievable that you can make such a nourishing and yummy breakfast in only 10 minutes. There is no better way to start the day then with a combination if sweet apples and a creamy porridge.

I love to start my day with oats in any shape or size because they are full of fiber, which keeps you satisfied for a long time and they improve your digestion. Oats are such a magical food. Not only are they super healthy but you can also make so many different kind of recipes with them such as burgers, bread, snacks and dessert. Oats never get boring and this breakfast never does either!

Since it’s such a quick recipe, it works perfectly for busy morning. Don’t worry if you don’t have time to eat the porridge with caramelised apples immediately. You can also pack it up and eat it later.

INGREDIENTS

100 g oats (glutenfree if needed)
450 g coconut milk
1 tbsp raisins
pinch of vanilla
pinch of salt
1 apple, chopped
1 tsp coconut oil
1 tbsp maple syrup
2 tbsp coconut yogurt
2 tbsp almond butter

Method:

Place the oats with the coconut milk and raisins into a small pot, add a pinch of salt and vanilla and cook on low heat about 5 minutes until it gets super creamy.

In the meantime, place the chopped apple into a pan, add the coconut oil, maple syrup and cinnamon. Stir and cook for about 5 minutes until the apple is softened.

Serve the porridge and caramelised apples in two bowls. Add almond butter and coconut yogurt on top.
