Israel meets Germany

This chicken couscous is one of my all time favorite dishes. It’s so incredibly easy to make and the perfect dish when you are cooking for a large group of people. Therefore I love making this chicken couscous when I have friends of.

The combination of the sweet dates and the bitter coriander is super tasty and the cumin adds some additional oriental flavor to the chicken. I get so many compliments on this meal and I enjoy making it as it only requires a small amount of ingredients and is really quick and easy. This dish is always a great success!

INGREDIENTS

1 chicken breast, cut into small pieces
1 tbsp coconut oil
salt
¼ tsp cumin
5 pitted medjool dates chopped
500 ml vegetable broth
4 small zucchinis cut into small pieces
1 tbsp fresh coriander chopped
150 gr couscous/quinoa (glutenfree option)

Method:

Heat up the coconut oil in a saucepan and fry the chicken until golden brown. Add some salt and set aside on paper towels on a plate to soak the excess oil

Place the chopped dates and cumin in a saucepan and sweat them a for about 2 min. Dash the vegetable broth over it and add the chicken, zucchini and couscous. Stir everything together and let it sit on small heat until the couscous is soft and the zucchini tender which is about 6-10 min. Plate the dish and sprinkle fresh coriander on top.
If you are using quinoa, cook the quinoa in double amount of water until soft and add to the chicken and veggies.
