Kidney Bean Brownies á la Lini’s Bites

Serves 10-12 brownies

Difficulty Easy

INGREDIENTS

240 g kidney beans
100 g oat flour
100 g hazelnuts, grounded
2 tbsp coconut oil
60 g cocoa powder, sugarfree
150 g dates, pitted
50 ml maple syrup
100 ml plant drink
1 tsp baking powder
Pinch of salt
1 handful chocolate chips

Method:

Preheat the oven to 180°C and line a casserole dish or baking tray with baking paper. Drain the kidney beans and wash them well. Place the kidney beans, coconut oil, plant drink, dates and maple syrup into a blender and mix until you have a sticky consistency.

Place all the dry ingredients into a bowl and mix. Add the sticky mixture and mix well. Pour the brownie dough into the lined dish and distribute evenly. Sprinkle the chocolate chips on top.

Bake for 25-30 and let the brownies cool off completely afterwards.
