I go nuts for nuts

These fruit and nut bars are the perfect afternoon snack! I usually get a little hungry around 4 o’clock. Lunch is already a few ago ago and dinner will only be in a few hours. In order to still be awake and productive I usually need a little pick me up. Therefore, I love to fall back on a snack that will keep me satisfied for a few hours and gives me energy. Dates and all those other yummy fruits are a great energiser as they are packed with natural sugar, which will give us lots of energy but at the same time won’t spike up our blood sugar as much as refined sugar would do. Therefore, we stay energised for a longer period of time. Nuts are full of healthy fats, which is not only brain food and keeps us focused but also keeps us satisfied for a long time. All together this is just the perfect snack that’s healthy and so so delicious!

My tip, make a batch of these fruit and nut bars over the weekend and keep them in the freezer so you can always grab one when you need or take them to work with you. you can store these bad boys for a month. Although I would be very surprised if they make it this long;).

Careful, this recipe is not low histamine! If you have a histamineintolerance you can make the recipe without the topping and enjoy it!

INGREDIENTS

For the bars:
280 g Medjool dates, pitted
150 g dried cranberries/raisins
75 g dried apricots
60 g buckwheat groats
60 g oats
60 g pumpkin seeds/sunflower seeds
40 g coconut, shredded
30 g coconut oil, melted
Topping:
60 g dark chocolate (minimun 70% cocoa)
2 tbsp coconut oil
1/4 tsp turmeric

Method:

Place the nuts, seeds and oats into a food processor and blitz for a few seconds until you have small bites. Add the rest of the ingredients for the bars and add 100 ml warm water. Mix until its quite smooth but you still have some chunky bits in it.

Line a casserole dish with baking paper and add the mixture into it. Press down firmly and place into the freezer. In the meantime, place the topping ingredients into a small bowl and warm in a hot water bath until melted. Spread on top of the bars. Freeze for 1 hour before cutting into bars and store in an airtight container in the fridge or freezer. I personally love it from the freezer.
