Start your day right!

A crunchy granola has always been one of my favourite ways to start the day! Once I started, to make it myself, I realized how easy it is, cheaper and how many amazing ways there are to make your own granola. I must say that this one is hands down my favourite combination so far. I love to enjoy it with coconut- or almond milk or with fresh fruits and coconut yogurt.

INGREDIENTS

130 ml maple syrup
4 tbsp coconut oil
200 g oats (glutenfree if needed)
150 g almonds
60 g macadamia nuts
60 g pistachios
50 g pumpkin seeds
20 g hemp seeds, shelled (or any other seeds)
1/2 tsp cinnamon, gounded
1/2 tsp vanilla, grounded
30 g coconut, shredded
150 g dried fruits, sulfur free (cranberry, raisins, dates, apricot)/chocolate drops

Method:

Preheat the oven to 170°C and line a baking tray with baking paper. Chop almonds, macadamia nuts and pistachios and add to a large bowl with the cinnamon, vanilla, oats, seeds and pumpkin seeds. Mix well with a spoon.

Place coconut oil and maple syrup into a pan and melt. Add the liquid to the granola and mix well. Place the granola mixture on to the lined baking tray and distribute evenly. Bake for about 25 minutes or until golden. After 15 min of baking, add the shredded coconut and mix through once. Once the granola is baked, take it out of the oven and cool off.

In the meantime, chop the dried fruit and add to the granola. Mix carefully with a large wooden spoon and store in an airtight glas or plastic container.
