Good Morning!

My favorite meal of the day is breakfast! I always look forward to all the yummy combinations. I especially love making breakfast with oats as they are full of fiber, protein and give me the perfect energy boost.  Also, they keep me satisfied for a long time so I can concentrate better and have the ideal basis until lunch.

These creamy overnight oats are absolutely incredible. The apple and passion fruit fits together so so well and make this breakfast super summery. The best part is, you can prepare it in the evening! It only takes a few minutes and you don’t have the stress in the morning to make breakfast.

If you have a histamine intolerance you might have to try if passion fruit works for you. I found very controversial opinions on it. I personally only reintroduced it recently back into my life. In case you don’t tolerate it, you can use blueberries instead. Tastes also really yum!

Difficulty Easy

INGREDIENTS

120 g oats
1 tbsp chia seeds/grounded flaxseeds
200 g coconut yogurt
1 tbsp maple syrup
130 ml coconut drink
Pinch of vanilla
2 tbsp shredded coconut
1 passion fruit
1 apple, grated

Method:

Place all the ingredients, except for the apple and passion fruit in a bowl and mix well. Cover and place in the fridge for at least 20 minutes or overnight. Add the grated apple before serving and mix again. Distribute on to two bowl and scoop the passion fruit on top.
