The best things in life a sweet

Those who know me might have noticed that I’m completely obsessed with coconut and try to include it in any recipe. You also know by now that I love sweets and need a treat everyday before I go to bed. These coconut pralines are such a great and easy treat to make in no time and just tastes heavenly with that chocolate drizzle. It reminds me of a famous chocolate bar that I use to love as a child, you know which one I mean?;)

I’m so excited that I can eat chocolate again! I haven’t eaten dark chocolate in years but thanks to my low histamine lifestyle, my gut healed itself and I could reintroduce lots of high histamine foods. It makes me feel so good that everybody who has intolerances, can cure themselves (everybody in their own time) and intolerances can be temporary. I didn’t reintroduce all foods yet but I’m on the right path:)

INGREDIENTS

180 g coconut, desiccated
4 tbsp coconut oil
2-3 tbsp maple syrup
Pinch of salt
100 g vegan dark chocolate (careful contains histamine)

Method:

Place the desiccated coconut, 2-3 tbsp of maple syrup, 3 tbsp of coconut oil and pinch of salt into a food processor (keep 1 tbsp of coconut oil for later). Blitz through until you have a smooth and sticky texture. Use your hands to roll into little balls and place on a baking sheet. You really need to squeeze the texture together. Place in the fridge.

Melt the chocolate in a hot water bath with 1 tbsp on coconut oil and drizzle on top. Cool in the fridge for about an hour before eating them and store them in an airtight container in the fridge.
