Christmas Vanilla Cookies

INGREDIENTS

100 g oat flour
50 g almond flour
1 tbsp flaxseeds, grounded soaked in 3 tbsp of water
75 g almond butter
40 g maple syrup
1/2 tsp vanilla, grounded
1/4 tsp baking powder
1/2 tsp gingerbread spice
Topping:
60 g dark/white chocolate
1 tsp coconut oil

Method:

Preheat the oven to 180°C and line a baking tray with baking paper. Place all the dry ingredients into a bowl and mix. Place the grounded flaxseeds into a small glass. Add 3 tbsp of water and let them soak for 5-10 minutes. Add all the liquid ingredients to the bowl and mix again. Knead with your hands until you have a dough. From half moons and place them on the line baking tray. Bake for 12-15 minutes and let them cool off completely.

In the meantime, melt the chocolate and the coconut oil in a water bath. Dip the cookies into it and let them dry.
