I like Hashtags because they look like Waffles #

I think breakfast is my favorite meal of the day! One of the reasons is recipes like these carrot waffles. They are just so incredibly good! Crunchy from the outside and soft from the inside. What I love about waffles is that they are so many ways to serve them. My favorite thing to do is to make a bunch of waffles on the weekend, place them in the middle of the table with lots of topping options and every person can build their own favorite waffle.

I love to add the carrot to the recipe because it makes the waffles taste like carrot cake, which I’m obsessed with. You can also use some fresh blueberries instead or make them plain and go crazy with the toppings.

My favorite toppings are:

  • almond butter
  • maple syrup
  • fresh fruits
  • coconut yogurt
  • shredded coconut
  • chocolate chips (only if you don’t habe histamine intolerance)

Difficulty Easy

INGREDIENTS

1 carrot, peeled and shredded (optional)
160 g oat flour
2 tsp baking powder
1-2 tbsp coconut sugar
1 tsp cinnamon
1/2 tsp vanilla
Pinch of salt
130 g coconut/almond milk
2 tbsp flaxseeds, grounded and soaked in 5 tbsp of water for 10 minutes
4 tbsp coconut oil, melted

Method:

Place all the dry ingredients into a mixing bowl and combine. Add the rest of the ingredients and mix well.

Heat up your waffle iron and place the dough in. Serve with the toppings of your choice.
