Summer Smoothie with Mango, Mint and Coconut

Ingredients

300 ml coconut water
1 small Mango, peeled and diced
1 tsp almond butter/ tigernut cream
10 g fresh mint
1 tsp coconut oil
3 Medjool dates, pitted and diced

Method:

Step 1

Place all the ingredients into a mixer and blend until smooth. Serve in a large glass and enjoy!

Smoothie Time!

This summer smoothie with mango, mint and coconut tastes like pure summer!

I just love a refreshing and yummy smoothie on hot days. The combination of coconut, creamy almond butter, juicy mango, fresh mint and sweet dates is heavenly and the perfect breakfast or snack. Only by looking at the bright yellow smoothie I’m in a good mood! This is exactly what you want when you need a fresh and sweet start in the day that doesn’t only taste so good but also gives you the energy for a productive morning or afternoon.

Smoothies are also a great way to enjoy a nourishing breakfast or snack on the go. I just pour it into a mason jar, like on the picture, put a straw in it and off I go.

This is my favourite smoothie recipe at the moment. I make it in the morning or after my workouts.

If you want, you can also add kale, to make it more green and a little less fruity. I sometimes do that. since it’s so hot and humid in the summer I’m craving lots of fruits and natural sugars to keep me energised.
