Chia Coconut Popsicles

Serves 6-8 popsicles

Ingredients

500 ml coconut milk (the creamy one from the can but without additives)
sliced fruit mango, peach, grapes, blueberries (whatever fruit you love)
2 tbsp coconut syrup/date syrup/maple syrup/honey
3 tbsp chia seeds

Method:

Step 1

Place the chia seeds into a small glass and add 100 ml of the coconut milk. Stir through and let it sit in the fridge for about 15 min.

Step 2

In the meantime, place the fruits into the popsicles moles. Mix the rest of the coconut milk, coconut syrup and chia seeds in a bowl and distribute evenly into the popsicles moles. Freeze for at least 2 hours or over night.

Holding on to the summer days with my chia coconut popsicles

Even though it’s already mid September, I’m not ready to let the summer go. I love the sun and hot days, especially if that means, I can indulge in these chia coconut popsicles. It might already be raining in some parts of the world but in my little world it’s still time for ice cream because let’s be honest it’s always time for some good ice cream.

So before I have to say officially goodbye to my shorts, and bikinis, I had to share this incredibly delicious and easy popsicle recipe. Its super tasty, creamy and the perfect treat for the last warm days or a movie night. My favourite part about this recipe is that you can personalise it to your own taste. Go get creative with all kinds of fruit combinations and sweeteners and enjoy!
